PORK AND GINGERED CUCUMBER PITAS
Prepared in 50 minutes or less.

¼ cup rice vinegar
2 tsp sugar
2 cucumbers thinly sliced, preferably Kirby
1 red jalapeno, thinly sliced
1 tbs extra-virgin olive oil
1 lbs ground pork
¼ cup hoisin sauce, also called Peking sauce is a thick reddish-brown, sweet and spicy condiment often used in Chinese cooking
1 tbs fresh ginger, grated
4 pitas, halved
Salt and fresh pepper to taste

In a medium bowl, whisk together rice vinegar, sugar and ¼ tsp salt until dissolved.

Toss in sliced cucumbers and jalapeno and allow to sit for 10 minutes. 

In a large skillet over medium-high heat, warm oil.  Add pork and cook for 5 minutes while breaking up the meat with a wooden spoon.  

Stir in the hoisin sauce, grated ginger, two tbs of water and fresh pepper.

Remove from heat and stuff the pita halves with cucumber salad and pork.   Serves 4.
